Just some questions, not sure where else to post this.

How do I stop my plane from wanting to do back flips? Once I am in the air, I am constantly having to press W because if I don't, the plane will keep rotating backwards.

You need to "trim" the airplane. There are various dynamic forces affecting the aircraft, and if you want to have it leveled so that the axis can stay at 0, you need to apply trim on the axes. The trim buttons are configurable in the input config menu.

Later there will be also a simplified mode, turning off some simulated forces, see

Trim doesn't seem to be working. I press "Shift" which is the default hot key for it and nothing happens.

Are you using the development version? There are multiple trim controls for each axis.

I'm using version 0.7.11.3100.
